  • 1 pound large shrimp, deveined and shells on
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 Scotch bonnet pepper, finely chopped (use gloves and be careful, it's very spicy)
  • 1 teaspoon allspice (pimento)
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme leaves
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • Juice of 1 lime
  • 1/4 cup water
  • 2 green onions, chopped
  • Fresh cilantro for garnish (optional)


  1. Marinate the Shrimp:

    • In a large bowl, combine the shrimp with salt, black pepper, allspice, and lime juice. Mix well and let it marinate for about 15-20 minutes.
  2. Prepare the Sauce:

    • In a skillet or large pan, heat the vegetable oil over medium heat.
    • Add the minced garlic and Scotch bonnet pepper to the pan. Sauté for about 1 minute, being careful not to let the garlic burn.
    • Add the smoked paprika, thyme, and sugar to the pan, stirring to combine.
  3. Cook the Shrimp:

    • Add the marinated shrimp to the pan and cook for about 2-3 minutes on each side, or until the shrimp turn pink and are cooked through.
    • Pour in the water and stir to create a sauce. Let it simmer for another 2-3 minutes until the sauce thickens slightly.
  4. Finish and Serve:

    • Stir in the chopped green onions and cook for another minute.
    • Remove from heat and garnish with fresh cilantro if desired.
